How to Make “Kickin” Pimento Cheese in 5 Minutes

Today at the Bluebird Market, my favorite local farmer (Bob James) did a demonstration on making home made pimento cheese.  He grows his own pimento peppers and roasts them in organic olive oil for this delicious recipe.

“Kickin” Pimento Cheese Recipe

Ingredients:

16 oz shredded cheddar cheese

16 oz shredded Velveeta cheese

1 1/2 cup Reduced Fat Mayo with Olive Oil

1/4 cuproasted and diced red Jalapeno peppers

3/4 cup roasted  and diced red pimento peppers

In microwave safe mixing bowl, melt shredded cheese.  Stir.  Add Mayo and stir.  Then add peppers.  Serve on whole wheat bread.
