I know it may sound disgusting, but I just had to try it. I got a recipe with my Bluebird CSA share box to add collard greens to my smoothies as a way to get the wonderful nutrients in collards into my diet without having to cook.
1 cup of soy milk
1 small container of fruit flavored yogurt (Greek for 2x protein)
2 tbs of soy protein
1/2 cup of fresh, washed, collards torn into bite sized pieces (or substitute spinach or kale.)
2 ice cubes
Blend in blender until smooth.
(Makes 2 servings)
